Not your average Protein Pancake Recipe
Fluffy, naturally sweet, with 1 serve of vegetables and no protein powder whatsoever - these protein pancakes make the perfect breakfast when you want something nourishing without spending ages in the kitchen.
Made with just a handful of simple ingredients, they’re naturally sweetened with banana and get their protein from eggs and greek yoghurt. The addition of vegetables might sound unusual, but it’s an easy way to add some extra fibre without compromising on flavour.
Best of all, everything goes straight into the blender, making these pancakes quick, easy and with minimal washing up.


Ingredients
(serves 1)
1 banana
2 eggs
2 tbsp buckwheat flour (any flour will work)
Handful of veg (I use frozen cauliflower but zucchini/baby spinach would be great)
1/2 tsp baking powder
1/2 tsp ceylon cinnamon
1-2 tbsp water
To serve: greek yoghurt, maple syrup
Method
Blend, pour in to an oiled pan and flip once bubbles appear (you might like to put a lid on the pan so they cook faster). This usually makes about 6 x small-medium pancakes. Serve with organic greek yoghurt and maple syrup.
