Sardine Pesto Pasta Recipe

Everyone knows sardines are an acquired taste, and I can honestly say that disguising them in a flavourful pesto pasta works incredibly well.
If you've wanted to eat more sardines but aren't quite ready to enjoy them straight from the tin, this recipe is a great place to start. The basil, garlic and parmesan help balance the stronger flavour of the sardines, creating a delicious, nutrient-dense meal that comes together in under 15 minutes.
Sardines are one of the most nutritious and affordable seafood options available. They're rich in omega-3 fatty acids, high-quality protein, calcium, vitamin D and collagen making them a fantastic food for supporting overall health. Unlike larger fish species, sardines are also naturally lower in mercury and other toxins due to their small size and shorter lifespan.


Ingredients
(serves 4)
Brown rice pasta (or any pasta you like)
Homemade pesto (I used this simple recipe)
2 x tins of sardines
To serve: rocket, grated parmesan
Method
Make your pesto and pop to the side. Cook pasta as per packet instructions. Stir pesto through cooked pasta. Drain sardine tins and add to pot, stir through while breaking up the sardines into smaller pieces. After plating, add a handful of rocket and grated parmesan on top. Enjoy!
